Make A Simple Light, Chocolate Eclair Cake All Without Turning On Your Oven

We’ve always loved éclair donuts, but this No-Bake Chocolate Éclair Cake is just as good as the original. You bet we’re making it more than once.

We’ve always been a bit hesitant about making no bake desserts, but after trying this one at a friend’s home, we’re hooked. Because this No-Bake Chocolate Éclair sits overnight, the flavors have time to really seep in and combine together.

The hardest part about making this recipe is definitely just the waiting. All the ingredients are basically kitchen staples or simple enough to find at any convenience store. Figure out how to make this fluffy, sweet layered cake of graham crackers, vanilla pudding, whipped cream, and chocolate at home!


For the filling:

  • 1¾ cups whipping cream
  • 2 boxes instant vanilla pudding
  • 3 cups milk
  • 1 box graham crackers (3 sleeves)

For the topping:

  • ⅓ cups cocoa powder
  • 1 cup sugar
  • ¼ cup milk
  • ½ cup butter
  • 1 teaspoon vanilla extract


SharedCover the bottom of a 9” x 13” baking dish with one layer of graham crackers.

Then, get a medium-sized mixing bowl and pour in the whipping cream. Use a hand mixer and beat on medium-high speed for about 4 minutes, or until the liquid turns into quipped cream.

In another, larger bowl, pour in your milk and vanilla pudding. Beat this mixture on medium speed for about 2 minutes, then pour in the whipped cream.

SharedMix the two until it forms one smooth, well-combined filling. Add about half of this mixture over the graham cracker layer you put in your baking dish. Get a spatula to flatten and even out the filling.

SharedPlace another layer of graham crackers on top of the pudding mixture, then add a second layer of filling.

On top, add your third and final layer of graham crackers.

SharedThen, get a small pot and add in the cocoa powder, milk, and sugar for your topping. Bring all three ingredients to a full, hearty boil. Let boil for 1 minute and stir constantly before removing from heat.

Allow the chocolate to cool for 1 minute while you continue to stir. Toss in the butter and vanilla, allowing the butter to melt. Stir to create a smooth, chocolate glaze.
