Roasting vegetables is perhaps the most fail-proof way to ensure that you’ll actually enjoy eating them. Here’s how you can do it, even if you don’t have a grill.
If you were never a fan of vegetables to begin with, then the thought of introducing vegetables to your diet can be incredibly daunting and an all-around unwelcome chore. This Parmesan Roasted Cauliflower recipe saves you from all this stress and fear.
All you have to do is chop up a head of cauliflower and roast it in the oven with oil and spices. During the roasting process, the flavors will all slowly seep into the cauliflower, so by the time you eat it, it tastes amazing and will change any hesitations you ever had about this particular vegetable.
- 8 ounces cauliflower florets, sliced horizontally
- 2 tablespoons melted butter
- 1 tablespoon olive oil
- Pinch of salt
- 3 light dashes of ground black pepper, to taste
- ½ cup parmesan cheese, grated
- 1 teaspoon chopped parsley leaves
Preheat your oven to 400ºF.
SharedIf you bought a whole head of cauliflower, slice it up into bite-sized florets, horizontally. Put the florets into a bowl with the melted butter and olive oil, then toss to coat.
Add a pinch of salt and black pepper, to taste.
SharedThen, transfer the cauliflower to a baking sheet. Make sure none of it layers on top of each other, for optimum roasting.
Roast in the oven for about 20-30 minutes, until the vegetable has crisped to your liking. When you’re satisfied, remove from the oven and sprinkle on parmesan and roasted parsley.
SharedPut the cauliflower back into the oven for a bit more roasting, about 5 minutes. This will allow the cheese to melt and form a crispy exterior.
